1. What is the difference between a latte and flat white?
Usually served in a standard size 220ml glass for a latte with similar milk textured, and a little more foam added to a latte.
A flat white is served in a cup, ranging between 170ml to 240ml. Depending on the cup size, flat white can appear either a little weaker or stronger than the latte, with a little less foam served.
2. What is an espresso?
Espresso means a single shot of coffee and is brewed using an espresso machine that uses pressure to brew. This pressure forces the hot water through the coffee grounds in which you get a full-body, crisp brightness and a subtle sweetness with some bitterness in the coffee.
Beans of high quality with a medium roast profile work well for espresso.
A perfect espresso is between 25-30ml and takes between 25-30 seconds to extract, with a thick crema on top. Any lesser duration will be ‘under extracted’ and leaves a sour taste. If it takes too long to pour then it is ‘over extracted’ and burnt, leaving you with a bitter taste.
3. What temperature should espresso coffee be served at?
The brewing temperature for espresso coffee should be 90-95 degrees celsius brewing water. For a medium roast, suggest 93 degrees celsius which is in the middle of the ideal temp range.
60 degrees is the ideal Milk heating temperature for most baristas. Some of the above dairy alternatives don't work well when heated at higher temperatures and lower temperatures tend to preserve the milk's natural sweetness.
4. Does it matter what milk I use?
The best milk for coffee is undoubtedly full-fat cow milk! However, the popularity of the plant-based diet is having an impact on how people drink their coffee and cafes are doing their best in keeping up with the trends and consumer demands.

OCM (OnCoffeeMakers.com) was started in 2007 with the first webpage about coffee machines. And for a number of years, we focused on helping people find their desired coffee machine (we still are helping folks with that! So, if you are looking for coffee machines for office or restaurants - check out the link).
In 2010, we started getting enquiries on restaurant marketing and we start to help food and beverage brands with their marketing. Below are campaigns and events that we have done over the years:

Check out this restaurant marketing guide to learn more about the many campaigns and companies we have worked with.
Since then, we have also created many marketing workshops and classes for the F&B industry. Many of these modules are still running in tertiary institutions such as Temasek Polytechnic Skillsfuture Academy and also ITE College East COC classes, below are some snippets of our lectures and workshops:
